Divide mint leaves and lime wedges between two glasses.
Add 2 tsp sugar to each glass.
Muddle firmly with a muddler or wooden spoon — crush the mint and squeeze the lime to release juices. Don't over-muddle or it turns bitter.
Fill glasses with crushed ice.
Top with sparkling water. Stir gently.
Garnish with mint sprigs and lime slices. Serve immediately.
