  • 6-8 large lemons (about 200ml fresh juice)
  • 150g sugar
  • 200ml water (for simple syrup)
  • 800ml cold water
  • Ice cubes
  • Fresh mint and lemon slices to garnish

    Make simple syrup: combine sugar and 200ml water in a saucepan. Heat until sugar dissolves. Cool completely.

    Juice lemons — you need about 200ml fresh juice. Roll lemons on the counter first to maximize juice.

    Combine lemon juice, simple syrup, and cold water in a pitcher. Stir well.

    Taste and adjust — add more syrup for sweetness or more lemon juice for tartness.

    Serve over ice with lemon slices and fresh mint.
