  • 200g long-grain white rice
  • 2 cinnamon sticks
  • 1L water (for soaking)
  • 1L cold water (for blending)
  • 100g sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Ice and cinnamon sticks to serve

Instructions

    Rinse rice. Combine with cinnamon sticks and 1L water. Soak for 8 hours or overnight.

    Drain rice, reserving soaking water. Remove cinnamon sticks.

    Blend soaked rice with 500ml fresh cold water until very smooth, about 2 minutes.

    Strain through a fine mesh sieve or cheesecloth, pressing to extract all liquid.

    Add remaining 500ml water, sugar, vanilla, and ground cinnamon. Stir until sugar dissolves.

    Serve over ice with a cinnamon stick. Shake or stir before each serving as it settles.
