Preheat oven to 175°C (350°F). Butter and flour a 9x5 inch loaf pan.
Brown the butter in a saucepan over medium heat until golden and nutty-smelling. Pour into a large bowl and let cool slightly.
Mash bananas thoroughly into the browned butter. Whisk in brown sugar, eggs, and vanilla.
Fold in flour, baking soda, salt, cinnamon, and nutmeg until just combined. Fold in walnuts or chocolate chips if using.
Pour into prepared pan. Sprinkle granulated sugar over the top for a crackly crust.
Bake 60-70 minutes until a toothpick inserted in the center comes out clean. If top browns too quickly, tent with foil.
Cool in pan 10 minutes, then turn out onto a wire rack. Best sliced when completely cool.
