  • For dough: 400g flour, 100g lard or butter, 1 egg, 100ml warm water, 1 tsp salt
  • For filling: 400g ground beef, 1 onion, 2 green onions, 1 tsp cumin, 1 tsp sweet paprika, 1/2 tsp chili flakes, 2 hard-boiled eggs chopped, 50g green olives, 30g raisins
  • 1 egg for egg wash

Instructions

    Make dough: cut fat into flour, add egg and water. Knead until smooth. Rest 30 minutes.

    Brown beef with onion and spices. Cool completely. Mix in eggs, olives, and raisins.

    Roll dough thin. Cut circles 12cm diameter.

    Place filling in center. Fold and crimp edges with a repulgue (rope pattern).

    Brush with egg wash. Bake at 200°C (400°F) for 20-25 minutes until golden.

    Serve warm with chimichurri or salsa criolla.
