  • 400g dried chickpeas, soaked overnight and cooked (or 2 cans, drained)
  • 4 tbsp tahini
  • 3 tbsp fresh lemon juice
  • 2 garlic cloves
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 4-6 tbsp ice-cold water
  • Good olive oil, paprika, and parsley to serve
  • Warm pita bread and vegetables to serve

Instructions

    If using dried chickpeas, cook until very soft (about 1.5 hours). Reserve cooking liquid.

    Add warm chickpeas to a food processor. Process for 1 minute until crumbly.

    Add tahini, lemon juice, garlic, cumin, and salt. Process 1 minute.

    With the motor running, add ice-cold water 1 tbsp at a time until hummus is very smooth and creamy. This takes 3-5 minutes of processing.

    Taste and adjust seasoning — it should be tangy, garlicky, and nutty.

    Spread in a bowl, make a well in the center, drizzle with olive oil, and dust with paprika and parsley.
