  • 4 slices Gruyère cheese
  • 4 shallots, thinly sliced
  • 2 tbsp butter
  • 4 brioche buns
  • Truffle aioli: 4 tbsp mayo, 1 tsp truffle oil, 1 garlic clove minced, salt
  • Truffle oil to finish
  • Arugula
  • Salt

Instructions

    Caramelize shallots in butter 20 minutes until golden.

    Make truffle aioli: mix mayo, truffle oil, garlic, and salt.

    Smash beef balls on a screaming-hot griddle. Season with salt.

    Cook 90 seconds, flip, add Gruyère, cook 30 more seconds.

    Toast buns. Spread truffle aioli.

    Top with arugula, patty, caramelized shallots. Drizzle with truffle oil.
