Pulse salmon in a food processor until roughly chopped (not a paste).
Mix with capers, dill, lemon zest, egg, breadcrumbs, salt, and pepper.
Form into 4 patties. Refrigerate 20 minutes.
Pan-sear in oil over medium-high heat 3–4 minutes per side until golden.
Mix herb aioli.
Toast buns. Spread aioli. Top with salmon patty, cucumber ribbons, and pickled onion.
