  • 600g fresh salmon fillet, skin removed
  • 2 tbsp capers, drained
  • 2 tbsp fresh dill
  • Zest of 1 lemon
  • 1 egg
  • 3 tbsp breadcrumbs
  • Salt and pepper
  • Herb aioli: 4 tbsp mayo, 1 tbsp fresh dill, 1 tbsp fresh chives, 1 tsp lemon juice
  • 4 brioche buns
  • Cucumber ribbons and pickled red onion

Instructions

    Pulse salmon in a food processor until roughly chopped (not a paste).

    Mix with capers, dill, lemon zest, egg, breadcrumbs, salt, and pepper.

    Form into 4 patties. Refrigerate 20 minutes.

    Pan-sear in oil over medium-high heat 3–4 minutes per side until golden.

    Mix herb aioli.
