Spanish Patatas Bravas

  • 800g waxy potatoes, cut into 3cm cubes
  • For bravas sauce: 400g canned tomatoes, 1 tsp smoked paprika, 1/2 tsp cayenne, 1 garlic clove, 1 tbsp olive oil, salt
  • For aioli: 4 tbsp mayonnaise, 1 garlic clove minced, 1 tsp lemon juice
  • Olive oil for frying

Instructions

    Parboil potato cubes 5 minutes. Drain and dry thoroughly.

    Fry in hot olive oil until golden and crispy, 15 minutes. Drain.

    Make bravas sauce: fry garlic in oil. Add tomatoes, paprika, and cayenne. Simmer 10 minutes. Blend until smooth.

    Make aioli: mix mayonnaise, garlic, and lemon juice.

    Arrange potatoes on a plate.

  6. 6

    Spoon bravas sauce over. Drizzle with aioli. Serve immediately.
