  • For batter: 150g all-purpose flour, 2 tbsp rice flour, 1 egg, 200ml ice-cold water, 1/2 tsp salt
  • 1 large bunch green onions, cut into 5cm pieces
  • 100g shrimp, peeled (optional)
  • For dipping sauce: 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sesame seeds, 1/2 tsp gochugaru

Instructions

    Make dipping sauce: combine all ingredients.

    Make batter: whisk flour, rice flour, egg, ice water, and salt until just combined (lumps are fine).

    Heat a generous amount of oil in a non-stick pan over high heat.

    Pour in batter. Arrange green onions and shrimp over the top.

    Cook 3–4 minutes until bottom is golden and crispy.

    Flip carefully. Cook 2–3 more minutes.
