  • 4 tbsp mayonnaise
  • 100g cotija cheese (or feta), crumbled
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Lime wedges
  • Fresh cilantro

    Grill corn directly over high heat, turning every 2 minutes, for 10–12 minutes until charred in spots.
