  • 700g chicken thighs
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice
  • For garlic sauce: 4 garlic cloves, 100ml oil, 2 tbsp lemon juice, salt
  • Pita bread, tomatoes, cucumber, pickles to serve

Instructions

    Combine all spices with olive oil, garlic, and lemon juice. Coat chicken thoroughly. Marinate 2+ hours.

    Make garlic sauce (toum): blend garlic with salt. Slowly drizzle in oil while blending. Add lemon juice. Should be fluffy and white.

    Grill or roast chicken at 220°C (425°F) for 25-30 minutes until charred at edges.

    Rest 5 minutes, then slice thinly.

    Warm pita bread. Spread garlic sauce. Add chicken, tomatoes, cucumber, and pickles.

    Wrap tightly and serve immediately.
