  • 700g ground beef (80/20 fat ratio)
  • 4 brioche buns
  • 8 slices American cheese
  • 1 large onion, thinly sliced
  • Special sauce: 1/2 cup mayo, 2 tbsp ketchup, 1 tbsp relish, 1 tsp mustard, 1/2 tsp garlic powder
  • Shredded iceberg lettuce
  • Sliced tomatoes and pickles
  • Salt and black pepper
  • Butter for buns

Instructions

    Mix special sauce ingredients and refrigerate. Caramelize onions in butter over low heat for 20-25 minutes.

    Divide beef into 8 equal balls (about 85g each). Do not season yet.

    Heat a cast-iron griddle over very high heat until smoking. Toast buns cut-side down until golden.

    Place beef balls on griddle and immediately smash down hard with a heavy spatula. Season with salt and pepper.
