Mix special sauce ingredients and refrigerate. Caramelize onions in butter over low heat for 20-25 minutes.
Divide beef into 8 equal balls (about 85g each). Do not season yet.
Heat a cast-iron griddle over very high heat until smoking. Toast buns cut-side down until golden.
Place beef balls on griddle and immediately smash down hard with a heavy spatula. Season with salt and pepper.
Cook 2 minutes until edges are crispy and brown. Flip, add cheese, and cook 1 more minute.
Stack two patties per burger. Assemble with special sauce on both buns, lettuce, tomato, caramelized onions, and pickles.
