  • 600g chicken thighs, cut into strips
  • For marinade: 2 tbsp soy sauce, 1 tbsp honey, 1 tsp turmeric, 1 tsp cumin, 2 garlic cloves, 1 stalk lemongrass
  • For peanut sauce: 150g peanut butter, 2 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp honey, 1 garlic clove, 100ml coconut milk, chili flakes

Instructions

    Blend marinade ingredients. Coat chicken strips. Marinate 1+ hours.

    Make peanut sauce: blend all ingredients until smooth. Thin with water if needed.

    Thread chicken onto soaked wooden skewers.

    Grill over high heat, turning occasionally, 10-12 minutes until charred and cooked through.

    Serve with peanut sauce, cucumber slices, and compressed rice.
