Vietnamese Fresh Spring Rolls

  • 12 rice paper wrappers
  • 200g cooked shrimp, halved lengthwise
  • 100g rice vermicelli, cooked
  • 1 head butter lettuce, leaves separated
  • 1 cucumber, julienned
  • Fresh mint, Thai basil, and cilantro
  • For peanut sauce: 4 tbsp peanut butter, 2 tbsp hoisin, 1 tbsp lime juice, 1 tsp sriracha, 2 tbsp water

    Make peanut sauce: whisk all ingredients together until smooth.

    Soak a rice paper wrapper in warm water 10–15 seconds until pliable.

    Lay flat on a clean surface. Place lettuce, vermicelli, herbs, cucumber, and shrimp in the center.

    Fold in the sides, then roll tightly from the bottom.

    Repeat with remaining wrappers and filling.

  6. 6

    Serve immediately with peanut dipping sauce.
