Spread mayonnaise on the outside of each bread slice — this creates a golden, even crust without burning.
Spread softened butter on the inside of each slice.
Pile cheese generously on two slices. Add any optional fillings.
Close sandwiches and cook in a cold non-stick pan over medium-low heat.
Cook 4-5 minutes per side, pressing gently, until deeply golden and cheese is fully melted.
The key is low and slow — too high heat browns the bread before the cheese melts.
Slice diagonally and serve immediately.
