  • 1 medium green papaya, shredded (about 400g)
  • 2–4 Thai chilies (adjust to taste)
  • 2 garlic cloves
  • 2 tbsp dried shrimp
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp palm sugar or brown sugar
  • 6 cherry tomatoes, halved
  • 50g long beans or green beans, cut into 3cm pieces
  • Roasted peanuts to serve

Instructions

    Pound garlic and chilies in a mortar to a rough paste.

    Add dried shrimp and pound briefly.

    Add beans and pound lightly to bruise.

    Add papaya, tomatoes, fish sauce, lime juice, and sugar.

    Toss and pound gently to combine — the papaya should be slightly bruised but still crunchy.

    Taste and adjust seasoning. Serve topped with roasted peanuts.
