The Croque Monsieur's more glamorous sibling — all the same ham, Gruyère, and béchamel, but crowned with a perfectly fried egg. The runny yolk breaks into the cheese sauce for a moment of pure indulgence. The best brunch sandwich in the world.

Ingredients

  • 4 thick slices white bread
  • 4 slices good-quality ham
  • 150g Gruyère, grated
  • For béchamel: 2 tbsp butter, 2 tbsp flour, 200ml milk, nutmeg, salt and pepper
  • 1 tbsp Dijon mustard
  • 2 large eggs
  • Butter for frying

Instructions

    Make béchamel: melt butter, whisk in flour, add milk gradually, season with nutmeg.

    Spread Dijon on two bread slices. Layer with ham and half the Gruyère. Top with remaining bread.

    Spread béchamel over tops. Sprinkle with remaining Gruyère.

    Bake at 200°C for 10–12 minutes until golden and bubbling.

    Fry eggs in butter until whites are set but yolks are still runny.

    Place a fried egg on top of each sandwich. Serve immediately.
