  • 4 large flour tortillas
  • 300g cooked chicken, shredded
  • 200g Oaxaca or mozzarella, shredded
  • 1 red bell pepper, sliced and sautéed
  • 1/2 onion, sliced and sautéed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream, guacamole, and salsa to serve

    Season chicken with cumin and chili powder.

    Heat a large skillet over medium heat.

    Place a tortilla in the pan. Add cheese on one half, then chicken and peppers.
