Cook bacon until crispy. Remove and crumble. Reserve 1 tbsp bacon fat.
Sauté pepper and onion in bacon fat until soft, 4 minutes.
Add black beans and warm through. Season with salt and pepper.
Scramble eggs in the same pan until just set and still slightly glossy.
Warm tortillas in a dry pan or microwave.
Layer eggs, bacon, vegetable-bean mixture, cheese, salsa, and sour cream in the center of each tortilla. Fold sides in, then roll tightly. Toast seam-side down in a pan for 1-2 minutes.
