  • 400g paneer, cubed
  • 600g fresh spinach (or frozen)
  • 1 onion, diced
  • 4 garlic cloves
  • 2cm ginger
  • 2 tomatoes, diced
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 4 tbsp heavy cream
  • Ghee or oil
  • Salt

Instructions

    Blanch spinach in boiling water 2 minutes. Drain and blend to a smooth purée.

    Pan-fry paneer in ghee until golden on all sides. Remove.

    Sauté cumin seeds until fragrant. Add onion and cook until golden.

    Add garlic, ginger, and spices. Cook 2 minutes. Add tomatoes and cook until thick.

    Add spinach purée. Simmer 10 minutes.

    Add paneer and cream. Simmer 5 minutes.

    Season and serve with naan or rice.
