Ingredients

  • 300g flat rice noodles
  • 300g shrimp, peeled
  • 3 eggs
  • 200g bean sprouts
  • 4 green onions, sliced
  • 3 garlic cloves, minced
  • For sauce: 3 tbsp tamarind paste, 2 tbsp fish sauce, 2 tbsp palm sugar
  • Crushed peanuts, lime wedges, chili flakes, and cilantro to serve

Instructions

    Soak noodles in warm water 20 minutes. Drain.

    Mix sauce ingredients until sugar dissolves.

    Heat wok over high heat. Add oil and shrimp. Cook until pink. Remove.

    Add garlic and noodles. Stir-fry 2 minutes.

    Push noodles aside. Add eggs and scramble.

    Add sauce and toss everything together.

    Add bean sprouts and shrimp. Toss briefly.

    Serve topped with peanuts, lime, and chili flakes.
