  • 300g wide flat rice noodles (fresh or soaked)
  • 200g chicken breast or beef, thinly sliced
  • 2 eggs
  • 200g Chinese broccoli (gai lan), chopped
  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 3 garlic cloves, minced
  • 2 tbsp neutral oil

Instructions

    Prepare noodles according to package. If using fresh, separate gently.

    Mix oyster sauce, soy sauce, dark soy sauce, and sugar in a bowl.

    Heat wok over very high heat until smoking. Add oil and garlic, stir-fry 15 seconds.

    Add protein and cook until sealed. Push to side.

    Add noodles and sauce. Toss vigorously to coat. Let noodles char slightly without stirring — this creates wok hei.

    Push noodles to side. Crack eggs into wok and scramble. Mix with noodles. Add broccoli and toss until wilted.
