Peruvian Lomo Saltado

Peru's most beloved stir-fry — strips of beef sautéed at high heat with tomatoes, red onion, and ají amarillo in a wok, then tossed with French fries and served over rice. A perfect fusion of Chinese stir-fry technique and Peruvian ingredients.

  • 600g sirloin steak, cut into strips
  • 2 tomatoes, cut into wedges
  • 1 red onion, cut into wedges
  • 2 ají amarillo peppers (or yellow chili), sliced
  • 4 garlic cloves, minced
  • 3 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • Fresh cilantro
  • French fries (freshly fried)
  • Steamed white rice

Instructions

    Season beef with salt and pepper.

    Heat wok over very high heat until smoking. Sear beef in batches until browned. Remove.

    Add onion and tomatoes to the wok. Stir-fry 2 minutes.

    Add garlic and ají amarillo. Cook 30 seconds.

    Return beef. Add soy sauce and vinegar. Toss vigorously.

    Add French fries and cilantro. Toss briefly.

    Serve immediately over steamed rice.
