  • 600g beef tenderloin or sirloin, cut into strips
  • 300g cremini mushrooms, sliced
  • 1 large onion, sliced
  • 2 garlic cloves
  • 200ml beef stock
  • 200ml sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 tbsp butter
  • Fresh parsley
  • Egg noodles or rice to serve

Instructions

    Season beef strips. Sear in butter over very high heat in batches until browned. Remove.

    Sauté onion until golden. Add mushrooms and cook until all moisture evaporates.

    Add garlic. Cook 30 seconds.

    Add stock and Worcestershire. Simmer 3 minutes.

    Remove from heat. Stir in sour cream and Dijon.

  6. 6

    Return beef. Heat gently — do not boil.

  7. 7

    Serve over egg noodles with fresh parsley.
