Classic Apple Pie

The most American of all desserts — a double-crust pie filled with cinnamon-spiced Granny Smith apples, baked until the crust is golden and the filling is bubbling. Serve warm with vanilla ice cream.

  • For crust: 300g flour, 1 tsp salt, 2 tbsp sugar, 200g cold butter, 6-8 tbsp ice water
  • For filling: 1.2kg Granny Smith apples, peeled and sliced, 150g sugar, 2 tbsp flour, 1 tsp cinnamon, 1/4 tsp nutmeg, 1 tbsp lemon juice, 2 tbsp butter
  • 1 egg for egg wash, vanilla ice cream to serve

Instructions

    Make crust: pulse flour, salt, and sugar. Add cold butter and pulse until pea-sized. Add ice water until dough comes together. Divide in two, wrap, and refrigerate 1 hour.

    Toss apple slices with sugar, flour, cinnamon, nutmeg, and lemon juice.

    Roll out one dough disk and fit into a 23cm pie dish. Fill with apple mixture. Dot with butter.

    Roll out second disk and place over filling. Crimp edges and cut vents. Brush with egg wash.

    Bake at 220°C (425°F) for 15 minutes, then reduce to 175°C (350°F) for 40-45 minutes until golden and bubbling.

    Cool at least 2 hours before slicing. Serve with vanilla ice cream.
